  • 350 grams silken tofu
  • 34 tbsp smooth peanut butter (to taste)
  • 34 tbsp agave syrup (or maple syrup/powdered sugar to sweeten) (to taste)
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 100 grams 70% dark chocolate (chips or broken pieces)
  • 400g tin full fat coconut milk

Instructions

  1. In a blender, combine silken tofu, peanut butter, agave syrup, vanilla extract, and salt. Blend until smooth.
  2. Spoon the mixture into ramekins or jars and refrigerate.
  3. For the ganache, melt dark chocolate and mix with creamy coconut milk until smooth.
  4. Pour ganache over chilled mousse and refrigerate for at least one hour before serving.
