  • 1 medium chicken breast
  • 23 slices fresh tomato (plus extra for the salad)
  • 2 slices mozzarella or provolone cheese
  • 1 tsp paprika
  • 1 tbsp olive oil
  • Salt & freshly cracked black pepper, to taste
  • 1 cup cucumber slices
  • 1 cup chopped lettuce
  • 1 tsp lemon juice or light vinaigrette

Instructions

  1. Carefully cut a pocket into the chicken breast without slicing all the way through.
  2. Stuff the pocket with tomato slices and cheese, then season the outside with paprika, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat and cook the stuffed chicken for about 5–6 minutes per side until golden brown and cooked through.
  4. In a mixing bowl, combine cucumber slices, chopped lettuce, and extra tomato slices; toss with lemon juice or vinaigrette.
  5. Serve the warm stuffed chicken alongside the salad.
