- 1 medium chicken breast
- 2–3 slices fresh tomato (plus extra for the salad)
- 2 slices mozzarella or provolone cheese
- 1 tsp paprika
- 1 tbsp olive oil
- Salt & freshly cracked black pepper, to taste
- 1 cup cucumber slices
- 1 cup chopped lettuce
- 1 tsp lemon juice or light vinaigrette
- Carefully cut a pocket into the chicken breast without slicing all the way through.
- Stuff the pocket with tomato slices and cheese, then season the outside with paprika, salt, and pepper.
- Heat olive oil in a skillet over medium heat and cook the stuffed chicken for about 5–6 minutes per side until golden brown and cooked through.
- In a mixing bowl, combine cucumber slices, chopped lettuce, and extra tomato slices; toss with lemon juice or vinaigrette.
- Serve the warm stuffed chicken alongside the salad.
