  • 16 oz cream cheese, softened
  • Fresh strawberries for topping

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a bowl, sift together flour, baking soda, cocoa powder, and salt. Set aside.
  3. Cream butter and sugar until fluffy; add egg and vanilla.
  4. Mix in buttermilk, food coloring, and vinegar. Gradually stir in dry ingredients until just combined.
  5. Pour batter into the pan and bake for 15-20 minutes; let cool completely.
  6. Lower oven to 325°F (160°C). Beat cream cheese and sugar until smooth; add eggs one at a time.
  7. Pour cheesecake mixture over cooled red velvet base and bake for 40-45 minutes.
  8. Cool at room temperature before refrigerating for at least four hours.
  9. Top with halved strawberries and drizzle with strawberry glaze before serving.
