  • 2 lbs lamb shoulder, cut into cubes
  • 2 tablespoons vegetable oil or ghee
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 2 tablespoons Madras curry powder
  • 1 teaspoon turmeric
  • 1 tablespoon tomato paste
  • 1 cup crushed tomatoes
  • 1 cup beef or lamb broth
  • 1/2 cup full-fat coconut milk

Instructions

  1. Heat oil in a heavy-bottomed pot over medium-high heat. Add cubed lamb, season with salt and pepper, and brown on all sides for about 5-7 minutes.
  2. Reduce heat to medium; add onion and sauté until translucent (about 5 minutes). Stir in garlic and ginger for an additional minute.
  3. Mix in curry powder, turmeric, cayenne pepper (if desired), ground cumin, smoked paprika, and cinnamon. Cook for about 2 minutes.
  4. Add tomato paste and crushed tomatoes; stir well. Pour in broth and coconut milk; bring to a gentle simmer.
  5. Cover and simmer on low heat for at least 1 hour or until lamb is tender.
