  • 1 chicken breast
  • 1 tsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp chili powder or cayenne
  • Salt & pepper to taste
  • 1 cucumber
  • 6 cherry tomatoes
  • 2 tbsp red onion
  • 1 tbsp chopped mint or parsley
  • Squeeze of lemon juice
  • 1 cup cooked white rice
  • 1 avocado
  • 1 tbsp spicy mayo (mayo + sriracha mix)
  • Optional: baby spinach or mixed greens

Instructions

  1. In a bowl, coat chicken cubes with olive oil, paprika, garlic powder, chili powder, salt, and pepper. Sear in a skillet over medium heat for 5-6 minutes until fully cooked.
  2. In another bowl, mix sliced cucumber, halved cherry tomatoes, chopped red onion, mint or parsley, lemon juice, salt, and pepper. Toss well and chill.
  3. To assemble the bowl: layer cooked rice (and optional greens), top with grilled chicken cubes, avocado slices, cucumber salad, and drizzle with spicy mayo.
