  • 12 oz penne pasta
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 2 oz cream cheese, softened
  • 2 tbsp chopped parsley or chives (optional)

Instructions

  1. Cook the penne in salted boiling water until al dente. Drain and set aside.
  2. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  3. In a skillet, heat olive oil and 2 tbsp butter over medium-high heat. Sear the chicken until golden brown on both sides; add minced garlic in the last minute of cooking.
  4. Remove the chicken and prepare the sauce by melting remaining butter in the skillet. Add garlic, then pour in cream and broth. Simmer for a few minutes before stirring in cream cheese until smooth.
  5. Add Velveeta, mozzarella, and Parmesan; stir until melted and creamy.
  6. Toss cooked penne with sauce; adjust consistency with reserved pasta water if needed.
  7. Serve with seared chicken on top and garnish with chopped parsley or chives if desired.
