  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 10 oz cremini mushrooms, sliced
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, finely grated
  • 1/2 cup Gruyère cheese, grated
  • Fresh thyme leaves
  • Salt and black pepper

Instructions

  1. Preheat oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a skillet, heat olive oil and butter over medium heat; sauté onions until soft.
  3. Add garlic and mushrooms; cook until browned and moisture evaporates.
  4. Stir in thyme, salt, pepper, and mix in cheeses until creamy.
  5. Roll out puff pastry; cut diagonal strips along the sides.
  6. Fill the center with mushroom mixture and braid the strips over it.
  7. Transfer to baking tray, brush with egg wash, then bake for 20-22 minutes until golden brown.
