  • 1.5 tsp baking soda
  • 1 tsp salt
  • 1 cup granulated sugar (for frosting)
  • 5 tbsp unsalted butter (for frosting)
  • ½ cup heavy cream (for frosting)
  • ¾ tsp salt (for frosting)
  • 1½ tsp vanilla (for frosting)
  • 200g dark chocolate (for ganache)
  • 8 oz cream cheese, room temp (for ganache)
  • ⅓ cup cocoa powder (for ganache)
  • 1 cup powdered sugar (for ganache)
  • ½ cup salted caramel sauce (for ganache)
  • 1 cup heavy cream (cold for ganache)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour baking pans.
  2. In a mixing bowl, combine dry ingredients: flour, sugars, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together wet ingredients: eggs, oil, sour cream. Mix into dry ingredients until combined.
  4. Stir in boiling water carefully until fully incorporated.
  5. Pour batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. While cooling, prepare the fudge frosting by melting sugar until golden brown; stir in butter and warm cream until smooth.
  7. Assemble by layering cake rounds with frosting and salted caramel sauce.
  8. Finish with dark chocolate ganache on top.
