  • 1 pound cherry tomatoes
  • 1 head garlic
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 pound pasta (spaghetti or your choice)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Rinse cherry tomatoes and pat dry; place in a mixing bowl. Slice the top off the garlic head.
  3. Drizzle tomatoes with 2 tablespoons olive oil, season with salt, pepper, and red pepper flakes; toss to coat.
  4. Spread tomatoes on the baking sheet along with the garlic, drizzle garlic with olive oil and sprinkle with salt. Roast for 25–30 minutes until blistered.
  5. Cook pasta according to package instructions until al dente; reserve about 1 cup of pasta water before draining.
  6. Squeeze roasted garlic into a bowl, combine with tomatoes, and gently mash together.
  7. Stir in remaining olive oil, optional balsamic vinegar, and season as needed.
  8. Toss cooked pasta into the bowl, adding reserved pasta water for desired consistency.
  9. Finish by folding in fresh basil and serving topped with grated Parmesan cheese.
