  • 500 g pumpkin (diced)
  • 2 garlic bulbs
  • 3 tbsp olive oil
  • 1/2 cup white apple vinegar
  • 2 cups small pasta
  • 3 cups chicken or vegetable stock
  • 50 g parmesan (grated)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Cut the tops off the garlic bulbs and place them along with diced pumpkin and rosemary in an oven-proof dish. Drizzle with olive oil and season with salt and pepper.
  3. Roast for about 45 minutes until the pumpkin is soft and caramelized. Allow the garlic to cool before squeezing out the cloves.
  4. In a pot, combine roasted pumpkin, garlic, rosemary leaves, chicken stock, white apple vinegar, and pasta; bring to a boil then simmer until pasta is cooked through, about 15 minutes.
  5. Stir in grated parmesan until creamy and serve immediately.
