Ingredients

  • 3 medium-sized tomatoes
  • 2 habanero peppers (adjust for heat preference)
  • 1 red bell pepper
  • 2 jalapeno peppers
  • 1 medium-sized mango (peeled and chopped)
  • Juice from 1 lime
  • 3 tablespoons fresh chopped cilantro
  • 1 teaspoon olive oil
  • Salt to taste

Instructions

  1. Preheat your oven to broil.
  2. Halve the tomatoes and place them cut-side up on a lightly oiled baking sheet. Halve the habaneros and jalapenos lengthwise and add to the sheet along with the quartered red bell pepper.
  3. Broil all vegetables for about 15 minutes until slightly charred.
  4. Meanwhile, heat olive oil in a sauté pan over medium heat and sauté the chopped mango for 6-8 minutes until it begins to brown.
  5. After removing the habaneros from the oven, broil the tomatoes for an additional 5-10 minutes until skins loosen significantly.
  6. Cool all ingredients slightly before peeling off skins from roasted tomatoes, jalapenos, and bell peppers.
  7. In a food processor, combine all ingredients including sautéed mango, roasted habaneros, lime juice, cilantro, and salt. Process until smooth.
  8. Chill in the refrigerator for at least four hours before serving.
