  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased or parchment-lined 9×13-inch baking dish.
  2. In a large bowl, mix together the flour, oats, brown sugar, baking soda, and salt. Pour in the melted butter and stir until crumbly.
  3. Press two-thirds of the crumble mixture into the bottom of the prepared dish to form a base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the base layer and spread evenly.
  6. Sprinkle remaining crumble mixture on top and add chopped walnuts if desired.
  7. Bake for 30–35 minutes until golden brown and set in the center.
  8. Allow to cool completely before slicing into bars.
