  • 200g lean ground beef or turkey
  • 1 medium sweet potato, diced
  • 1 ripe avocado, sliced
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • tsp cumin
  • tsp smoked paprika
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400F (200C). Toss diced sweet potatoes with olive oil, salt, and pepper; roast for 20-25 minutes until tender.
  2. In a skillet over medium heat, add olive oil and ground meat; cook until browned. Stir in tomato paste, cumin, smoked paprika, salt, and pepper; simmer for 2-3 minutes.
  3. Assemble the bowl: Layer cooked ground meat at the base, followed by roasted sweet potatoes, sliced avocado on top. Garnish with fresh parsley or cilantro if desired.
