  • 1 firm pear, peeled and cored from the bottom
  • 200 ml apple vinegar
  • 2 tbsp brown sugar
  • Zest of orange
  • 1 cinnamon stick
  • 2 whole cloves
  • 1 wheel brie or camembert (200250 g)
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • Pinch of flaky salt or chopped rosemary (optional)

Instructions

  1. In a small pot, combine apple vinegar, brown sugar, orange zest, cinnamon stick, and cloves. Add the pear and simmer gently for 20-25 minutes until tender. Cool in poaching liquid.
  2. Slice the brie horizontally and place the poached pear upright on one half. Close with the other half.
  3. Roll out puff pastry on a floured surface and wrap around the brie and pear combination, sealing edges beneath.
  4. Brush with beaten egg and sprinkle with salt if desired. Bake at 200°C (392°F) for 20-25 minutes until golden brown.
