  • 1/3 cup old-fashioned oats
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons all-purpose flour
  • 2 tablespoons light brown sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In a large bowl, cream softened butter with granulated and brown sugars until fluffy. Beat in egg and vanilla.
  4. Gradually mix dry ingredients into wet mixture until just combined. Fold in diced peaches.
  5. For the streusel topping, mix oats, melted butter, flour, brown sugar, and cinnamon until crumbly.
  6. Scoop dough onto the prepared baking sheet about 2 inches apart and sprinkle with streusel.
