  • 2 sheets puff pastry
  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • 8 ounces goat cheese
  • Zest of 2 lemons
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced
  • 1 egg

Instructions

  1. Prepare the blackberry jam by combining blackberries, water, lemon juice, and sugar in a saucepan. Cook over medium heat for 20-30 minutes until thickened; smash berries gently as they cook. Cool to room temperature.
  2. Thaw puff pastry sheets for 20-25 minutes at room temperature, then roll each into a rectangle about ¼ inch thick.
  3. Spread half of the goat cheese on one half of each pastry sheet, then layer half of the cooled blackberry jam over the cheese.
  4. Cut each pastry into 12 strips using a sharp knife. Fold each strip in half and gently twist to form spirals.
  5. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Place twists on the sheet, brush with beaten egg, and sprinkle with raw sugar mixed with thyme. Bake for 16-18 minutes until golden brown.
