  • 4 Tbsp extra-virgin olive oil
  • 1 large head cauliflower (trimmed and sliced into florets)
  • 3/4 tsp kosher salt (divided)
  • 4 Tbsp mild harissa (divided)
  • 2 Tbsp tahini
  • 1 Tbsp honey
  • 2 Tbsp fresh lemon juice (divided)
  • 1/4 tsp freshly ground black pepper
  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, mix 2 Tbsp olive oil, 1/2 tsp salt, and 2 Tbsp harissa. Add cauliflower florets and toss until coated.
  3. Spread the cauliflower on a baking sheet in an even layer and bake for 35 minutes, tossing halfway through.
  4. After roasting, toss the cauliflower with the remaining harissa and bake for an additional 5 to 7 minutes until charred.
  5. For the tahini-honey sauce, whisk together the remaining olive oil, tahini, honey, lemon juice, salt, and black pepper in a bowl until smooth.
  6. Serve the roasted cauliflower on a platter drizzled with tahini-honey sauce and garnish with parsley if desired.
