  • 2 pounds Yukon gold potatoes
  • 1 green chili
  • 3 cloves garlic
  • 1 small onion
  • 1/2 green bell pepper
  • 2 tablespoons butter (for spiced mixture)
  • 2 cups milk
  • 2 cups grated sharp cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and slice Yukon gold potatoes into 1/8-inch rounds.
  3. In a saucepan, melt butter over medium heat, then sauté chopped onion, garlic, and green chili until softened.
  4. Stir in finely chopped bell pepper, tomato paste, and spices; cook for another minute.
  5. In the same pan, make the cheese sauce by adding butter, whisking in flour, gradually adding milk until thickened. Stir in salt and cheese until melted.
  6. Layer sliced potatoes in a baking dish with half of the spiced mixture and cheese sauce; repeat layers.
  7. Top with remaining cheese and bake covered for 60 minutes; uncover and bake another 30 minutes until golden brown.
