  • 1/3 cup plain flour (all-purpose)
  • 2 1/2 cups milk
  • 2 1/2 cups strong cheddar, grated
  • 12 oz canned tuna (drained and flaked)
  • 12 oz canned sweetcorn (drained)
  • 1 cup frozen peas
  • Salt and pepper to taste

Instructions

  1. Boil the Pasta: In a large pot of salted boiling water, cook the rigatoni until just al dente. Drain and set aside.
  2. Make the Cheese Sauce: In a saucepan over medium heat, melt the butter. Stir in the flour and cook for one minute until lightly golden. Gradually whisk in the milk until smooth.
  3. Combine: In a large bowl, mix cooked pasta with cheese sauce, flaked tuna, drained sweetcorn, frozen peas, and season with salt and pepper.
  4. Assemble: Transfer mixture to a greased baking dish and sprinkle remaining cheddar on top.
