  • 1 cup shredded parmesan cheese
  • 1/4 cup diced sun-dried tomatoes

  • 3/4 tbsp smoked sweet paprika
  • 1 tbsp Italian seasoning
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp butter
  • 2 tbsp dried shallots
  • 2 tbsp minced garlic
  • 1 tbsp minced onion
  • 3 tbsp Bob's Red Mill 1:1 gluten free flour
  • 2 tbsp tomato paste
  • 1 cup diced spinach
  • 1/2 tsp smoked sweet paprika
  • 1/2 tsp salt

Instructions

  1. Season chicken thighs with smoked paprika, Italian seasoning, salt, and black pepper.
  2. Cook the gluten-free pasta according to package instructions; drain and set aside.
  3. In the same pot, melt butter and sauté shallots, garlic, and onion until fragrant.
  4. Sprinkle in gluten-free flour, stirring well before gradually adding chicken broth and heavy cream.
  5. Mix in parmesan cheese, sun-dried tomatoes, spinach, tomato paste, Italian seasoning, smoked paprika, and salt until the sauce is smooth.
  6. Add cooked pasta and seasoned chicken to the sauce; toss gently to coat.
  7. Serve hot garnished with fresh basil.
