  • 3/4 cup small tapioca pearls (sago)
  • 3 ripe mangos (2 lbs total, cubed)
  • 1/2 cup chilled evaporated milk
  • 3 tablespoons condensed milk (to taste)
  • 1 cup full-fat coconut milk
  • Optional: coconut jelly and mango jelly

Instructions

  1. Cook the sago pearls in boiling water for about 15 minutes until they turn transparent. Let them sit covered for another 15 minutes.
  2. Strain and rinse the cooked pearls under cold water, then soak them in cold water to keep them from sticking.
  3. Blend one cubed mango with evaporated milk until smooth.
  4. In a mixing bowl, combine the drained sago, chopped mango pieces, optional jellies, condensed milk, and coconut milk. Add in the blended mango mixture and mix well.
  5. Chill in the refrigerator for at least one hour before serving.
