  • 1/4 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tablespoon fresh thyme

Instructions

  1. In a medium bowl, mix warm water, sugar, and yeast; let sit for 5 minutes until frothy.
  2. In a large bowl, combine flour and salt. Add the yeast mixture and olive oil; stir until dough forms.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth.
  4. Place dough in an oiled bowl, cover with a towel, and let rise for 1 to 1.5 hours until doubled.
  5. Mix ricotta, mozzarella, Parmesan, lemon zest, and lemon juice in a bowl; set aside.
  6. Preheat oven to 475°F (245°C) with the pizza stone or baking sheet inside.
  7. Punch down risen dough; roll out into a thin round shape (about 12 inches).
  8. Transfer dough to parchment paper or pizza peel; spread cheese mixture evenly over the top and sprinkle with thyme.
  9. Bake for 10-12 minutes until crust is golden brown and cheese is bubbly.
  10. Drizzle with olive oil and honey before serving.
