  • 1/2 cup vegetable oil
  • 1 cup water
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 2 cups powdered sugar (for glaze)
  • 23 tbsp fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a large bowl, combine cake mix, pudding mix, eggs, vegetable oil, water, lemon juice, and zest. Mix with an electric mixer on medium speed for about 2 minutes until smooth.
  3. Pour the batter into the prepared pan, spreading it evenly. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  4. While baking, whisk together powdered sugar and fresh lemon juice for the glaze until smooth; adjust thickness if needed.
