  • 1 tbsp lemon zest (from 2 large lemons)
  • ¼ cup fresh lemon juice
  • 1 tsp vanilla extract
  • 1 cup buttermilk + 1 tbsp lemon juice or vinegar
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp fresh lemon juice (for glaze)
  • Optional: 1 tsp lemon zest (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a bundt pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the butter and sugar using an electric mixer until pale and fluffy—about 3-5 minutes.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in lemon zest, lemon juice, and vanilla extract until combined.
  6. Gradually add the dry ingredients alternately with buttermilk, starting and ending with the dry mix. Be careful not to overmix; combine just until smooth.
  7. Pour batter into the prepared bundt pan and smooth out the top. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Let it cool in the pan for 10-15 minutes before transferring it to a wire rack.
  9. For the glaze, whisk together powdered sugar and fresh lemon juice. Adjust consistency by adding more lemon juice if needed.
  10. Once your cake is cool, drizzle the glaze generously over the top.
