  • 1 teaspoon kosher salt
  • 2 cups vegetable oil
  • 4 tablespoons freshly squeezed lemon juice
  • 4 tablespoons ice water

  1. In a food processor, blend the peeled garlic cloves and kosher salt until smooth, scraping down the sides as needed.
  2. With the processor running, slowly drizzle in the vegetable oil to create an emulsion.
  3. Once half of the oil is incorporated, alternate adding lemon juice with the remaining oil until fully blended.
  4. Mix in ice water for desired creaminess and smooth texture.
  5. Transfer to a bowl; optional: drizzle with olive oil and garnish with parsley.
  6. Chill before serving for enhanced flavor.
