  • 2 links spicy Italian sausage (casings removed)
  • 2 leeks (white parts only)
  • 1 fennel bulb
  • 1 large parsnip
  • 1 medium carrot
  • 1 rib celery
  • Salt
  • Black pepper
  • 1 teaspoon Italian seasoning
  • 4 cloves garlic (minced)
  • 1 (28 ounce) can whole tomatoes (drained and chopped)
  • 1 (15 ounce) can navy beans (drained and rinsed)
  • 6 cups chicken stock/broth
  • 1 cup chopped kale
  • 1 tablespoon chopped Italian flat-leaf parsley
  • Squeeze of lemon (about 1 teaspoon)
  • 1 (16 ounce) package gnocchi (optional)

Instructions

  1. If using gnocchi, cook according to package instructions and keep warm.
  2. In a large soup pot over medium-high heat, add oil and crumble in the spicy sausage; brown for a few minutes.
  3. Add sliced leeks, fennel, parsnip, carrot, and celery; season with salt, pepper, and Italian seasoning. Sauté until veggies are tender.
  4. Stir in minced garlic until fragrant; add chopped tomatoes and navy beans. Pour in chicken broth and mix well.
  5. Cover and simmer for about 20 minutes until vegetables are tender.
  6. Turn off heat; stir in kale, parsley, and lemon juice. Adjust seasoning if needed.
  7. Serve by adding cooked gnocchi to bowls and ladling hot soup over it.
