  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 (14-ounce) can crushed tomatoes
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a heavy-bottomed pot, heat olive oil over medium-high heat. Season the beef with salt and pepper, then sear on all sides until browned.
  2. Remove the beef from the pot and add chopped onion, carrots, celery, and minced garlic. Sauté until softened (about 5 minutes).
  3. Return the seared beef to the pot. Add beef broth, crushed tomatoes, rosemary, and thyme. Stir gently to combine.
  4. Bring to a boil; reduce heat to low and cover. Simmer for 3-4 hours until the beef is fork-tender.
  5. Shred the beef in the pot using two forks and mix with the sauce. Garnish with fresh parsley before serving.
