  • 450 g chicken breast
  • 2 tbsp whole grain mustard
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 red bell pepper
  • 1 cup baby spinach leaves
  • 1 cup cherry tomatoes
  • 1 cup white rice
  • 1 tbsp olive oil
  • Salt & pepper
  • 1 tbsp lemon juice

Instructions

  1. Cook the rice: Combine water and a pinch of salt in a pot. Bring to a boil, add rice, reduce heat, cover, and simmer until fluffy.
  2. Roast the tomatoes: Preheat the oven to 200°C (400°F). Toss cherry tomatoes with olive oil, salt, and pepper; roast for 10–12 minutes.
  3. Cook the chicken: Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; cook until golden brown on all sides.
  4. Make the honey mustard sauce: Stir in honey, mustard, soy sauce, and lemon juice into the skillet; cook until thickened.
  5. Add veggies: Toss sliced bell pepper into the skillet; cook for an additional two minutes until soft.
  6. Assemble your bowl: Serve chicken and peppers over baby spinach leaves alongside roasted cherry tomatoes and fluffy rice.
