  • 3 pounds roma or plum tomatoes
  • 8 cloves garlic
  • 3 tablespoons olive oil
  • 2 yellow onions
  • ½ cup packed basil leaves
  • 12 cups water or vegetarian broth

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Halve tomatoes and place them on the baking sheet alongside peeled garlic cloves. Drizzle with olive oil and season generously with salt and pepper. Roast for 40-45 minutes until caramelized.
  3. In a large pot over medium heat, caramelize sliced onions in olive oil for about 20 minutes until golden brown.
  4. Allow the roasted tomatoes and garlic to cool for 10 minutes, then blend them in a food processor with basil and caramelized onions until smooth.
