  • 2 celery ribs
  • ½ medium onion
  • 1 lb boneless skinless chicken breasts
  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1¼ tsp salt
  • 1 cup plus 2 tbsp milk

Instructions

  1. In a large pot, combine chicken broth, celery, onion, and chicken breasts. Bring to a boil over medium-high heat, then reduce to low and simmer for about 15 minutes until the chicken is cooked through.
  2. Meanwhile, in a mixing bowl, whisk together flour, baking powder, and salt. Stir in milk until the dough forms a shaggy ball.
  3. Roll out the dough on a floured surface to about ¼ inch thick; cut into strips or squares.
  4. Remove cooked chicken from the pot and discard celery and onion. Drop dumpling pieces into the simmering broth, cooking for 20–30 minutes until they are fluffy.
  5. Shred the chicken and return it to the pot; season with salt and pepper before serving warm.
