  • 12 tablespoons very cold unsalted butter
  • ½ cup very cold heavy cream
  • 2 large eggs (1 egg yolk reserved for brushing)
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • 1 tablespoon chai spice blend
  • ½ teaspoon kosher salt
  • 1 heaping cup powdered sugar (for glaze)
  • 2 teaspoons chai spice blend (for glaze)
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream (for glaze)
  • 1 tablespoon maple syrup
  • pinch of kosher salt

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a food processor, pulse together flour, sugar, baking powder, chai spice blend, and salt. Add cold butter and pulse until mixed.
  3. In a separate bowl, whisk together the heavy cream and eggs. Gradually add this mixture to the dry ingredients until a dough forms.
  4. Shape the dough into a disc and chill in the freezer for about 30 minutes.
  5. Roll out the chilled dough and cut into desired shapes. Brush with reserved egg white.
  6. Bake for about 20–22 minutes until golden brown.
  7. While baking, prepare the glaze by whisking together powdered sugar, additional chai spice blend, vanilla extract, heavy cream, maple syrup, and salt.
  8. Dip the tops of warm scones in glaze; let set before serving.
