  • 1 chicken leg quarter (bone-in, skin-on)
  • 1 tsp olive oil
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper, to taste
  • 1 clove garlic, minced
  • 1 cup green beans, trimmed
  • 1 tsp olive oil or butter
  • 1 garlic clove, minced
  • Salt & black pepper to taste
  • 1 cup baby carrots
  • 1 tsp olive oil
  • 1 tsp honey or maple syrup
  • Pinch of salt & black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Rub the chicken with olive oil, herbs, minced garlic, salt, and pepper. Place on a baking sheet and roast for 35-40 minutes until golden brown.
  2. Toss baby carrots in olive oil, honey (or maple syrup), salt, and pepper. Spread on another baking sheet and roast alongside the chicken for 25-30 minutes until tender.
  3. In a skillet over medium heat, sauté green beans with minced garlic in olive oil for 6-8 minutes until bright green.
  4. Serve the roasted chicken with glazed carrots and sautéed green beans.
