  • 8 oz bowtie pasta
  • 1 English cucumber
  • 10 oz cherry tomatoes
  • 1 green pepper
  • 1/2 red onion
  • 5 oz kalamata olives
  • 8 oz feta cheese
  • 3 tbsp fresh parsley
  • 1/3 cup olive oil
  • 1/3 cup water
  • 3 tbsp red apple vinegar
  • 1/2 lemon, juiced
  • 2 tbsp honey
  • 2 tsp dijon mustard
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Cook the bowtie pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. Chop the cucumber, green pepper, red onion, halve the cherry tomatoes, and slice the olives.
  3. In a mixing bowl, whisk together olive oil, water, red apple vinegar, lemon juice, honey, Dijon mustard, minced garlic, parsley, dill, salt, and pepper.
  4. In a large bowl, combine cooled pasta with vegetables and olives. Pour vinaigrette over the mixture and toss gently until well combined.
  5. Chill in the refrigerator for at least 30 minutes before serving.
