Delight your guests with these spooky Halloween Slime Cupcakes! Enjoy fluffy vanilla treats filled with lime, topped with vibrant green buttercream.

  • 175 g Baking spread (or butter) (softened, unsalted)
  • 175 g Caster sugar
  • 3 Eggs (large)
  • 2 tsp Vanilla extract
  • 175 g Self raising flour
  • 25 g Black food coloring
  • 200 g Butter (softened, unsalted)
  • 400 g Icing sugar
  • 1 tsp Vanilla extract
  • 12 tbsp Milk
  • Green food coloring
  • Yellow food coloring
  • 150 g Tinned custard
  • Green food coloring
  • Candy eyes
  • Green sprinkles

Instructions

  1. Preheat your oven to 140C Fan/325F/Gas Mark 3. Line a cupcake tin with cupcake cases.
  2. Mix together the baking spread and caster sugar in a bowl using an electric mixer for about 5 minutes until smooth and fluffy.
  3. Add the eggs one at a time along with the vanilla extract. Whisk them in well until fully combined.
  4. Gently whisk in the self-raising flour until just combined.
  5. Pour in the black food coloring and mix it thoroughly into the batter.
  6. Divide the mixture evenly among the lined cupcake cases. Bake them for 25-30 minutes or until a skewer inserted into the center comes out clean. Once baked, allow them to cool on a rack completely.
  7. Once cool, use a cupcake corer or knife to carefully make holes in the middle of each cupcake.
  8. Add some green food coloring to the tinned custard and mix well. Spoon this vibrant mixture into each cupcake hole.
  9. In another bowl, mix together softened butter and icing sugar until smooth. Then add vanilla extract, milk, and both green and yellow food colorings until you achieve your desired bright green shade. Adjust consistency by adding more milk if necessary.
  10. Using a piping bag or spoon, pipe or spread the bright green buttercream onto each cupcake. Decorate creatively with candy eyes and green sprinkles.
  11. Store any leftovers in an airtight container in a cool place; consume within three days for optimal freshness.
