  • 1 teaspoon salt (divided)
  • 1 teaspoon black pepper (divided)
  • 3 teaspoons paprika (divided)
  • 2 teaspoons garlic powder (divided)
  • 1 pound lean ground beef
  • 2 tablespoons honey
  • 1 teaspoon sriracha
  • ¼ teaspoon crushed red pepper
  • 2 cups 2% low fat cottage cheese
  • 1 avocado (diced)

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Toss diced sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder on the baking sheet. Roast for 30-40 minutes until tender.
  3. Meanwhile, heat remaining olive oil in a non-stick skillet over medium heat. Cook ground beef with seasoning until browned (about 10 minutes).
  4. In a small bowl, mix heated honey with sriracha and crushed red pepper.
  5. Assemble bowls by dividing roasted sweet potatoes, ground beef, cottage cheese, and diced avocado. Drizzle hot honey sauce over each bowl.
