  • 1 ½ lbs raw peeled shrimp
  • 2 avocados
  • 34 tomatoes
  • 1 jalapeño pepper
  • Fresh cilantro
  • Juice from 1 lime
  • 2 tsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a medium bowl, combine the chili powder, cumin, oregano, garlic powder, onion powder, salt, black pepper, and olive oil. Toss the shrimp in the spice mixture until coated.
  2. In another bowl, mix mashed avocados with minced cilantro, garlic, lime juice, salt, and pepper to create guacamole.
  3. For pico de gallo, combine diced tomatoes, minced garlic, jalapeño pepper, red onion, and cilantro in a separate bowl.
  4. Preheat a grill pan over medium heat with cooking spray. Grill the seasoned shrimp for 1-2 minutes per side until opaque.
  5. Assemble the tostadas by layering guacamole on each shell followed by grilled shrimp and pico de gallo.
