  • Salt & pepper
  • 1 cup brown rice
  • 2 cups water
  • Pinch of salt
  • 2 carrots, sliced into coins
  • 1 tsp olive oil
  • 1 tsp dried thyme or oregano
  • 3 tbsp mayonnaise
  • 1 tbsp Greek yogurt
  • 1 tsp fresh lemon juice
  • 1 tsp red chili flakes
  • Black pepper
  • Fresh parsley, chopped

Instructions

  1. Cook brown rice in salted water until fluffy (about 40-45 minutes).
  2. Season chicken with olive oil, garlic powder, smoked paprika, salt, and pepper. Grill for 5-7 minutes on each side until cooked through.
  3. Sauté sliced carrots in olive oil with thyme until tender-crisp (about 5-7 minutes).
