This Grilled Chicken Cobb Salad with Honey Dijon is a refreshing, nutritious dish that perfectly balances flavors and textures. Ideal for summer picnics or as a satisfying meal prep option, this salad features tender grilled chicken, crispy turkey bacon, fresh vegetables, and a delectable honey Dijon dressing.

  • 34 boneless skinless chicken breasts
  • 8 cups chopped romaine lettuce
  • 3/4 cup cherry tomatoes
  • 1 medium cucumber
  • 1 large avocado
  • 6 hard-boiled eggs
  • 8 slices turkey bacon
  • 3 Tbsp raw honey (melted if solid)
  • 1/4 cup dijon mustard
  • 2 Tbsp fresh lemon juice or white vinegar
  • 1/4 cup avocado oil
  • 1/4 tsp sea salt
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 Tbsp avocado oil (for the grill or pan)

Instructions

  1. Prepare the dressing by whisking melted honey, Dijon mustard, lemon juice or vinegar, avocado oil, and sea salt in a mixing bowl until smooth.
  2. Season chicken breasts with sea salt, black pepper, garlic powder, and onion powder.
  3. Grill the chicken on a preheated grill or pan with avocado oil for about 5-7 minutes per side until cooked through. Let rest before slicing.
  4. In a large bowl, layer chopped romaine and top with sliced grilled chicken, cherry tomatoes, cucumber slices, avocado slices, chopped turkey bacon, and hard-boiled eggs.
  5. Drizzle the honey Dijon dressing over the salad just before serving and toss gently.
