  • 1 1/4 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 2 tablespoons plain yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano, minced (or 1 1/2 teaspoons dried)
  • 1/8 teaspoon ground black pepper
  • 1 teaspoon lemon juice
  • 1 tablespoon extra virgin olive oil (plus more for grilling)
  • 2 lemons, thinly sliced
  • 1 cup plain yogurt
  • 2 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 1 cucumber, peeled and grated

Instructions

  1. Soak wooden skewers in water for 30 minutes.
  2. In a mixing bowl, combine salt, yogurt, minced garlic, oregano, pepper, lemon juice, and olive oil.
  3. Add chicken pieces to the marinade and coat well. Cover and refrigerate for 30 minutes to 1 hour.
  4. Prepare tzatziki by squeezing excess water from grated cucumber and mixing it with yogurt, garlic, salt, pepper, and lemon juice. Chill until serving.
  5. Preheat grill to medium-high heat.
  6. Assemble skewers by threading marinated chicken and lemon slices alternately.
  7. Grill skewers for about 5–7 minutes on each side until cooked through.
  8. Serve hot alongside chilled tzatziki sauce.
