  • 2 tbsp extra-virgin olive oil
  • Juice of lemon
  • 1 tsp dried oregano
  • 1 cup cooked rice or quinoa (white or brown)
  • 1 medium Persian cucumber, sliced
  • 8 cherry tomatoes, halved
  • 10 kalamata olives
  • 2 tbsp crumbled feta (optional)
  • 1 cup tzatziki (store-bought or homemade)
  • Pita or flatbread, cut into wedges (optional)
  • 115g (4 oz) Greek yogurt (for homemade tzatziki)
  • small cucumber, grated and squeezed (for homemade tzatziki)
  • 1 garlic clove, finely grated (for homemade tzatziki)
  • Squeeze of lemon juice (for homemade tzatziki)
  • Pinch of salt and dried dill (for homemade tzatziki)

Instructions

  1. Whisk together olive oil, lemon juice, and oregano in a mixing bowl.
  2. Slice halloumi into thick pieces and coat with half of the dressing; let marinate.
  3. Prepare vegetables by slicing cucumbers and halving tomatoes.
  4. If making homemade tzatziki, mix grated cucumber with yogurt, garlic, lemon juice, salt, and dill.
  5. Heat olive oil in a skillet over medium heat; cook halloumi until golden on both sides.
  6. Assemble bowls with rice or quinoa as the base, topped with veggies, olives, feta, and cooked halloumi.
  7. Drizzle remaining dressing over each bowl and serve immediately.
