  • 1 cup mushrooms, sliced
  • 2 eggs
  • 1 avocado
  • 56 cherry tomatoes, halved
  • 2 tbsp feta cheese, crumbled
  • Butter or olive oil
  • Fresh parsley (for garnish)
  • Salt & pepper (to taste)

Instructions

  1. For the Mushroom & Scrambled Egg Toast: In a skillet over medium heat, melt butter or olive oil. Sauté mushrooms with salt until golden brown (about 5 minutes). In another pan, scramble eggs until soft and creamy. Toast the rustic bread until golden brown. Layer sautéed mushrooms on top followed by scrambled eggs and garnish with fresh parsley.
  2. For the Avocado & Tomato Feta Toast: Toast another slice of bread. Spread or layer avocado on the toasted slice, arrange halved cherry tomatoes on top, sprinkle with feta cheese, season with salt and pepper, and garnish with parsley.
