  • 1 salmon fillet (150-180g)
  • 1 medium potato, peeled and diced
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 1 tsp olive oil
  • 1 garlic clove, smashed
  • 1 tsp paprika
  • 1 tsp honey or maple syrup
  • Salt & black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rub the salmon fillet with olive oil, garlic, paprika, salt, and pepper; let marinate.
  3. Place the salmon on a baking sheet and bake for 12-15 minutes until flaking easily.
  4. Boil diced potatoes for 5-6 minutes until tender; drain and pan-fry in olive oil until golden.
  5. Sauté baby carrots in olive oil with honey until glossy.
  6. Steam or sauté broccoli until bright green.
  7. Serve the salmon alongside potatoes, glazed carrots, and broccoli.
