  • 8 chicken drumsticks
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt & pepper
  • 600 g potatoes, cubed
  • 3 carrots, chopped
  • 1 red bell pepper, chopped

Instructions

  1. Preheat the oven to 200C (390F).
  2. In a mixing bowl, combine chicken drumsticks with olive oil, minced garlic, thyme, oregano, paprika, salt, and pepper; toss to coat.
  3. In another bowl, mix the cubed potatoes, chopped carrots, and red bell pepper with olive oil and season with salt and pepper.
  4. Spread the seasoned vegetables on a baking tray and nestle the marinated chicken among them.
  5. Roast in the preheated oven for 40-45 minutes until the chicken is cooked through and golden brown.
  6. Garnish with freshly chopped parsley before serving.
