1 lb ground beef
1 large egg
½ cup breadcrumbs
¼ cup grated Parmesan cheese
3 cloves garlic, minced
12 oz linguine
¾ cup heavy cream
4 tbsp unsalted butter
1 tbsp olive oil
1 tbsp lemon juice
1 tbsp chopped parsley
Salt to taste
Black pepper to taste
Instructions
In a large bowl, combine the ground beef, egg, breadcrumbs, Parmesan, garlic, salt, and pepper until just mixed. Form into 20–24 meatballs.
Heat olive oil in a skillet over medium heat. Sear meatballs until browned on all sides (6–8 minutes). Set aside.
In the same skillet, melt butter and sauté minced garlic until fragrant. Stir in lemon juice and parsley before returning the meatballs to the skillet to simmer for 5–7 minutes.
Cook linguine as per package instructions. In a saucepan, melt butter and bring heavy cream to a simmer; stir in Parmesan until melted.
Toss cooked linguine in the sauce and serve topped with meatballs and extra garlic butter.
