  • 3 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 6 slices of toasted baguette or crusty bread
  • 1.5 cups shredded Gruyère or Swiss cheese

Instructions

  1. Sear beef short ribs in olive oil until browned on all sides, then set aside.
  2. In the same pot, melt butter and slowly caramelize sliced onions for about 20-25 minutes.
  3. Add minced garlic and cook briefly before returning the short ribs to the pot.
  4. Pour in beef broth along with Worcestershire sauce, bay leaf, thyme, salt, and pepper; simmer on low for about 2 hours.
