  • 1 cup grated Parmesan cheese

  • 1 cup whole milk or half-and-half

  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season diced chicken with salt and pepper, cooking for 5–7 minutes until golden brown.
  2. Boil water in a separate pot, add salt, and cook pasta according to package instructions until al dente. Drain and reserve some pasta water.
  3. In a mixing bowl, whisk together eggs, cheese, garlic, and milk until smooth. Gradually mix in reserved pasta water to reach desired consistency.
  4. Reduce heat under the skillet to low and add cooked pasta into the skillet with chicken. Pour sauce over the mixture and toss gently with tongs until well combined.
  5. Adjust seasoning as necessary and serve hot with extra Parmesan if desired.
