  • 10 oz rotini pasta
  • 1 cup heavy cream
  • 4 oz Velveeta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and reserve some pasta water.
  2. Season chicken pieces with Cajun seasoning, Italian seasoning, salt, and pepper. In a skillet, heat olive oil over medium-high heat. Sear the chicken for about 4-5 minutes on each side until golden brown and cooked through.
  3. In the same skillet, reduce heat to medium and sauté minced garlic in butter until fragrant.
  4. Add heavy cream to the skillet and stir well. Incorporate Velveeta cubes until melted, then add mozzarella and Parmesan cheese until smooth. Adjust consistency with reserved pasta water if necessary.
  5. Toss cooked rotini into the sauce mixture until well coated. Let simmer on low heat for another two minutes.
  6. Serve by plating creamy rotini alongside seared chicken pieces, garnished with fresh parsley.
