  • 1.5 lbs beef chuck, cut into bite-sized cubes
  • 1 tbsp coconut oil
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1-inch piece of fresh ginger, grated
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder, adjust to taste
  • 1 tsp garam masala
  • 1 (14 oz) can chickpeas, drained and rinsed
  • 1 (14 oz) can diced tomatoes
  • 1 (14 oz) can full-fat coconut milk
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Juice of 1 lime
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup plain yogurt

Instructions

  1. In a large skillet or Dutch oven, heat coconut oil over medium-high heat. Brown the beef cubes on all sides.
  2. Add diced onion and cook until translucent (about 5 minutes). Stir in minced garlic and grated ginger; sauté for another minute.
  3. Sprinkle in the spices—cumin, coriander, turmeric, smoked paprika, chili powder, and garam masala—mixing well.
  4. Incorporate the chickpeas, diced tomatoes, and coconut milk; season with salt and pepper. Bring to a simmer; reduce heat to low and cover. Cook for 25–30 minutes until the beef is tender.
  5. For the garlic naan: In a mixing bowl, combine flour, baking powder, and salt. Gradually add yogurt until dough forms. Knead gently on a floured surface until smooth; roll out into flatbreads.
  6. Heat a skillet over medium heat and cook each naan for about 2–3 minutes per side until golden brown.
  7. Garnish the curry with fresh cilantro and lime juice before serving alongside warm garlic naan.
