  • 1 lb boneless skinless chicken breasts, diced
  • 6 strips turkey bacon, chopped
  • 1 cup finely chopped onion
  • 1 cup fresh spinach
  • 1 tbsp olive oil
  • Salt & pepper, to taste
  • 1 tsp garlic powder
  • Cheese sauce (store-bought or homemade using cream cheese and broth)

Instructions

  1. In a large pot over medium heat, heat olive oil and add diced chicken. Season with salt, pepper, and garlic powder; cook until browned (5-7 minutes). Remove chicken and set aside.
  2. In the same pot, add turkey bacon; cook until crispy (about 5 minutes). Remove the turkey  bacon but leave some grease.
  3. Sauté onions in the remaining grease until translucent (3-4 minutes).
  4. Add cooked chicken and turkey bacon back to the pot; stir to combine.
  5. Stir in fresh spinach until wilted, then pour in cheese sauce or mix cream cheese with broth for creaminess.
  6. Mix well and serve hot.
