  • 1.5 lbs beef sirloin or flank steak, thinly sliced
  • 2 tbsp vegetable oil
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 (13.5 oz) can coconut milk
  • 1/2 cup beef broth (or vegetable broth)
  • 1 tbsp soy sauce (or fish sauce)
  • 1 tbsp brown sugar

Instructions

  1. Prepare all ingredients by slicing the beef, chopping the onion, mincing the garlic, and grating the ginger.
  2. In a large skillet over medium heat, add vegetable oil. Once heated, add sliced onions and cook until translucent (3–4 minutes). Stir in minced garlic and grated ginger; sauté for another minute.
  3. Add red curry paste, ground cumin, turmeric, and optional chili flakes to the skillet. Stir well and toast the spices for about 2 minutes.
  4. Incorporate the sliced beef into the pan. Stir-fry until browned on all sides. Pour in coconut milk and beef broth; add soy sauce and brown sugar. Mix thoroughly.
  5. Reduce heat to low and let simmer for 15–20 minutes until slightly thickened, stirring occasionally.
  6. While the curry simmers, cook jasmine rice according to package instructions and warm pre-made naan bread.
